About the Recipe

Decadent and moist gluten-free and dairy-free chocolate banana bread with a rich cocoa flavor and bursts of chocolate chips.

Ingredients

  • 1 cup gluten free flour blend

  • ½ cup cocoa powder

  • 1 teaspoon baking soda

  • ¼ teaspoon salt

  • 3 bananas mashed


  • ⅔ cup coconut oil

  • ⅔ cup brown sugar

  • 1 egg large

  • 1 teaspoon pure vanilla extract

  • ¾ cup chocolate chips

  • ¼ cup non-dairy milk

Preparation

  1. Preheat the oven to 425ºF (218ºC). Grease a loaf pan for easy removal.

  2. In a large bowl, whisk together the gluten-free flour blend, baking powder, baking soda, salt, brown sugar, vanilla extract and cocoa powder. Stir in the chocolate chips.

  3. In another bowl, mash the ripe bananas using a fork or a pastry blender. Add melted coconut oil, egg, and non-dairy milk. Mix well until combined.

  4. Pour the wet ingredients into the dry ingredients. Stir until just combined, being careful not to overmix.

  5. Transfer the batter into the prepared loaf pan. Smooth the top with a spatula.

  6. Sprinkle additional chocolate chips on top for extra indulgence.

  7. Place the loaf pan in the preheated oven and bake the bread for 8 minutes at this high temperature to help it rise better and form a nice dome top. Then, reduce the oven temperature to 350ºF (175ºC).

  8. Continue baking for 45-50 minutes, adjusting the time based on the size of your loaf pan. To check if it's done, insert a toothpick into the center of the bread. If it comes out clean, the bread is fully baked. If you see batter or crumbs, it needs more time in the oven.

  9. Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
