About the Recipe

Ingredients
320g gluten-free flour
1tbsp psyllium husk (which acts as a gluten substitute – more on that below)
300 ml lukewarm water
3g active dry yeast
1tsp sugar
1tsp salt
2 tbsp oil
Preparation
Mix the yeast and sugar with warm water (between 95-110 degrees F) and stir well. Allow the mixture to sit for 5-10 minutes.
In a large bowl add the flour, psyllium husk and salt and mix well. Make a whole in the middle, add the yeast mixture and oil. Kneed well for 10 minutes.
Shape the dough and place it in a pre-oiled the loaf pan, cover it with a piece of plastic wrap that has been lightly coated with oil. Let the dough rise in a warm place for 45 to 60 minutes, or until it has risen slightly above the rim of the loaf pan.
Once the dough has risen and is nearing the top of the pan, preheat your oven to 350°F. Take off the plastic wrap and put the pan in the oven to bake for 60-65 minutes. To prevent over-browning, cover the bread loaf with a piece of foil halfway through the baking time.
After baking, take the loaf out of the oven and let it cool down completely before slicing it. Once cooled, slice the entire loaf and store it in a container at room temperature for a maximum of 4 days, or in the freezer for up to one month.
